HOOG komt natuurlijk van zijn hoge branding, een karakteristiek van traditionele Franse koffie. Italiaanse koffies zijn ook hoog gebrand maar vallen onder een compleet andere smaakgroep. ze hebben een zeer romige textuur met gerookte hinten. Franse koffie daarentegen doet denken aan de zoetige bitterheid van pure chocolade. Ze hebben ook vaker een heel sterke, scherpe smaak.
